Traditionally this beef stew is cooked gradually over night and eaten as breakfast in early mornings but you can enjoy it over lunch or dinner.

This is a spicy stew with magnificent flavors and fragrances of various spices,which give the much needed warmth in cold season.

Origin of Beef Nihari Recipe

Beef Nihari began around the finish of the eighteenth century in Nawab s’ Kitchen.(Nawab s’ were semi- autonomous rulers of princely States of South Asia in Mughal times and also after that period).So we having some imperial Nawabi Food.

Nihari comes from the Urdu word Nihari, which means morning.In the times (Nawabs would have Nihari in breakfast).There is no particular word for Nihari in English yet it is fundamentally a smooth flour basede spicy beef stew.

How to make Homemade Nihari Masala

  1. Take whole ingredients in a pan and dry roast for a minutes on medium flame.
  2. Let is cool down.
  3. In food processor,add roasted spices and grind to make fine powder.
  4. Add powder spices like Red chili,Turmeric and salt grind again.
  5. Finely homemade Nihari Masala is ready.

Ingredients

1.Beef-Make sure you use a good quality beef for the best taste.

2.Onion-we will thinly slice the onions to use in this Nihari.

3.Whole spices-Whole spices like Cloves,Black cumin,Black cardamon,Star arise, Green cardamon,Black peppercorns, Fennel seeds,Bay leaf,Nutmeg, Mace,Cinnamon stick and dry roast before grind.

3.Spices Powder-We will use some everyday spices powders.

4.Ginger Garlic Paste-Make a paste with ginger,garlic and add in the nihari.You can make this paste beforehand and store it in the fridge too.

5.Wheat Flour-I have use wheat flour in Nihari.

6.Cooking Oil-Here,I have added oil for the best taste.

How to make Nihari recipe instructions step by step

1.Nihari Masala-Take a pan and add whole spices dry roast for a minute on medium flame.

Remove from flame and transfer to a food processor grind to a fine powder.

2.Cooking the Nihari-Take a pot,add oil and onion fry until golden brown.

Add beef, ginger, garlic paste,salt,red chili powder, Coriander powder, cumin powder, turmeric powder and salt mix well.

Add Nihari Masala and mix well.Add water mix well cover and cook on low flame for about 1 hour until the meat is tender.(keep checking in between).

3.Add Wheat Flour-Dissolve flour in 1 cup water such that ture are no lumps.

Slowly add it to the nihari stir to mix it well in the nihari and let it simmer for 10 minutes .

until the nihari thickens.

4.Garnish-with julienne ginger and green chili.

Tip

1.Roast Whole Spices make them fragrant and bursting with aromas.

2.Always remember whole spices (when grounded) are stronger in flavor than store brought ground spices.

3.You can increase the amount of red chilli powder,if you want the Nihari to be spicy.

4.The Nihari Masala when prepared fresh.

5..The homemade Nihari Masala keeps well for up to 2 months and can be used for Nihari.

Whole Spices Ingredients

  • 6 Cloves
  • 8 Black pepper corn
  • 4 Green Cardamom
  • 2 tsp Fennel Seeds
  • 2 Black Cardamom
  • 2 Cinnamon sticks Small Piece
  • 2 Star arise
  • 2 tbsp Coriander Seeds
  • 1 tbsp Cumin
  • Mace (javitri) Small Piece
  • Nutmeg (jaifil) Small Piece
  • 1 tsp Dried ginger (sonth)
  • 1 tsp Caraway Seed
  • 2 Bay leaves

Powder Spices Ingredients

  • 1 tbsp Salt
  • 2 tbsp Red chili powder
  • 1 tsp Turmeric powder

prepare Nihari

  • 1/2 kg Beef bones
  • 1/2 kg Beef shank
  • 1 tbsp Garlic Paste
  • 1 tbsp Ginger Paste
  • 2 litre Water as required
  • 1/2 cup Wheat Flour
  • 1 cup Water
  • 1/2 Cup Cooking Oil
  • 1 Onion (medium) thinly sliced

Prepare Chili Oil (optional)

  • 1/8 cup Oil
  • 1 tbsp Red Chili Powder

Garnishing

  • Ginger julienne cut
  • Green Chili Chopped
  • Coriander leaves Chopped
  • Fried onion
  • Lemon wedge

Assembling Nihari

  • Nihari
  • Chili oil
  • Fried onion
  • Green chili
  • Ginger julienne
  • Coriander
  • lemon juice

Instructions

Prepare Nihari Masala

  • Take a pan and heat it on a medium to low flame roast the whole spices for a minutes.
  • Let is cool down.
  • In Spice mixer,add roasted spices,gring well.
  • Add powder spices like Red chili,Turmeric and salt grind again.
  • Finely homemade Nihari Masala is ready.

Making Nihari

  • Add Cooking oil to a large pot and heat it on a medium to low flame fry the onion until golden then taken out half quatity of fried onion and reserve for garnishing.
  • Then add meat and mix well until change color.
  • Add ginger,garlic paste and mix well for a minutes.
  • Add prepared nihari masala,mix well and cook for 5 minutes.
  • Add water,mix well and bring it to boil cover and cook on low flame for 2 hours.(checking the between) until meat is tender.
  • Dissolve wheat flour in 1 cup of water such that there is no lumps.
  • Gradually add dissolve wheat flour in nihari
  • Stir to mix it well in the nihari and let it cook for another 10 minutes until the nihari thickens.

To Prepare Tarri (Chili Oil)

  • Heat oil in a pan and add red chili powder,mix well for a second and dish out & set aside.

Assembling Nihari

  • To serve,add nihari in a bowl,tarri,spread fried onion,green chili,ginger,coriander and lemon juice.
