Chicken Biryani (pakistani style)

Chicken Biryani is a traditional Pakistani and Indian rice dish made by layered into a cooked chicken gravy and then layered with parboiled rice, herb, fried onion, and food color.

Chicken gravy where the chicken is cooked along with yogurt, tomatoes, powder spices, and whole spices.

The rice is cooked along with whole spices that make it flavourful.

The layers of rice and gravy and topped with herb and fried onion.

Gravy ingredients

  • 1 kg Chicken
  • 1 Cup Yogurt
  • 4 Medium Tomatoes chopped
  • 2 Medium Onion (ring)
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 6 Plums
  • 2 Bay leaf
  • 1 Cinnamon stick
  • 1 Black cardomom
  • 4 Cloves
  • 4 Black pepper corns
  • 1 Star anise (badiyan phool)
  • 1 tsp Turmeric powder
  • 1/2 tsp Whole spices powder
  • 1 tbsp Cumin powder
  • 2 tbsp Coriander powder
  • 1/2 tsp Black pepper powder
  • 2 tbsp Red chili powder
  • 2 tsp Salt
  • 6 Green chili
  • Coriander leaves chopped
  • Mint leaves chopped
  • 1 Cup Cooking oil as required

Parboiled Ingredients

  • 3 Cup Rice (basmati)
  • 4 tbsp Oil
  • Water as required
  • 2 Bay leaf
  • 1 Cinnamon stick
  • 1 Black cardomom
  • 2 Cloves
  • 4 Black pepper corns
  • 3 tbsp Salt

layering ingredients

  • Coriander leaves chopped
  • Mint leaves chopped
  • slit green chilli
  • Food color few drop
  • 4 tbsp Milk
  • Fried onion


  • In a bowl,add rice and water,wash and soak for 30 minutes before cooking.

Chicken Gravy

  • In a pot,add oil,onion and fry until golden brown.take out half fried onion and set aside.
  • In remaining fried onion,add ginger,garlic paste and saute little.
  • Add chicken and fry until chicken changes colour.and then add bay leaf,cinnamon stick,black pepper corn,star anise,plums,cloves,black cardomom,coriander powder,cumin powder,salt,turmeric powder,red chili powder,black pepper powder,whole spices powder and mix well.
  • And then add tomatoes and mix well and cook until tomatoes are soft.
  • Add beaten yogurt and mix well,cover and cook for 5 minutes then cook on high flame until oil add green chili,coriander leaves,mint leaves fry for few minutes.
  • Chicken gravy is ready.

Parboiled Rice

  • Boil the rice with oil,salt,bay leaf,cinnamon stick,black cardomon,cloves,black pepper corn and drain the water off when the rice is 80% done.

Biryani layering

  • In milk add yellow food colour and mix well keep aside.
  • In a pot,add half layer of boiled rice and spread it add cooked chicken gravy and add remaining boiled rice.
  • Add dissolve food colour and fried onion,coriander leaves,mint leaves, cover and steam cook on low flame for 10 minutes.
  • Chicken biryani is ready serve with raita and salad.
