KADHI PAKORA is one of the most popular north indian dishes deep fried pakora and dunked in a yogurt based curry made with Gram Flour and Spices.
What Is Kadhi Called In English?
Kadhi is a Dish starting from the indian subcontinent.It consists of a thick sauce based on Gram Flour,and contains Vegetable fritters Called Pakora,to which yogurt is added to give it a bit of sour taste.It is often eaten with boiling Rice.

INGREDIENTS OF KADHI PAKORA

GRAM FlOUR:This is flour made from split chicken pea pluse.A similar called chickpea flour made from the chickpea can also be used.

CURRY LEAVES:Curry leaves give a special taste to this kadhi pakora.

YOGURT:This is the most significance ingredient.kadhi is made with sour yogurt called Dahi.

SPICES:kadhi pakora spices are coriander powder,cumin powder,red chili powder,turmeric powder,salt.

OThER INGREdIENTS:Chopped onion,chopped coriander,Green chilies sliced.

HOW TO MAKE KADHI PAKORA RECIPE
To make kadhi,first a batter is made with gram flour and yogurt and then cooked with spices.Since the word kadhi literally means “Kadhna” which in punjab means well cooked,this thin batter with tempering is cooked on slow flame till it thickens and creamy thick gravy is formed.

THREE COMPONENTS MAKING THIS KADHI PAKORA RECIPE

FOR THE KADHI YOGURT BASE
So for the kadhi yogurt base.you fundamentally mix together yogurt, gram flour,water and spices.I like to utilize a hand whisk,just ensure there are no lumps.This is base of the curry,and it is supposed to be thin and runny.set aside,while you make the masala for the kadhi.

In huge pot,add kadhi batter,and bring to a boil.Now reduce the heat to low,and slow cook for at least 30 minutes while stirring occasionally.Kadhi needs to be cooked long and slow to develop the flavour properly.

FOR THE ONION PAKORA ( ONION FRITTERS )
While the kadhi is cooking away,start preparing the onion pakora batter.This is a gram flour batter in which spices and chopped onions are added.If you want the pakora to be soft,add a few water.If you don’t want very soft pakora then include less water.

Make the pakora batter,and deep fry until cooked through and golden brown and crispy.

MAkING THE KADHI PAKORA
Pakora are fry,and then kadhi base is cooked,add the onion pakora in the kadhi.cook for low flame about 6 minutes.

FOR THE TADkA
Last step of kadhi pakora is the Tadka.you simply need to fry garlic cloves,whole red chili,cumin seed,curry leaves,mustard seed.nigella seeds in little oil.tadka is ready,transfer it to the kadhi pakora.

Finally delicious kadhi pakora is ready

Ingredients

  • KADHI BATTER INGREDIENTS:

  • Gram flour 1/2 cup

  • Yogurt 1 cup

  • Garlic powder 1 tsp

  • Turmeric powder 1/2 tbsp

  • Cumin powder 1 tsp

  • Coriander powder 1 tsp

  • Red chili powder 1 tbsp

  • Salt 1 tsp

  • Green chilies slices 2

  • ONION PAKORA INGREDIENTS:

  • Gram flour 1 cup

  • Salt 1/2 tsp

  • Coriander powder 1 tsp

  • Cumin powder 1/2 tsp

  • Red chili powder 1 tbsp

  • Turmeric powder 1/2 tsp

  • Coriander leaves chopped

  • Green chili chopped

  • Curry leaves chopped

  • Onion 1 cup chopped

  • Water as required

  • TADKA INGREDIENTS:

  • Oil 1/4 cup

  • Garlic cloves 5-6

  • Whole red chili 4-5

  • Cumin seed 1 tsp

  • Nigella seeds 1 tsp

  • Mustard seeds 1 tsp

  • Curry leaves 10

Directions

  • Making Curry Mixture:
    In a bowl,add yogurt add gram flour,red chili,turmeric powder,salt,cumin powder,coriander powder,garlic powder whisk it well till smooth mixture.

  • Making Onion Pakora:
    Take 1 cup gram flour in the bowl and add red chili powder,salt,coriander powder,cumin powder,turmeric powder and mix well.
    Add 1 cup chopped onion,coriander leaves,green chili,curry leaves mix well.
    Add water as needed to make a thick batter.



  • Making the Kadhi:
    Transfer the curry mixture to a pot and add 4 cup water,green chilies .stir with a wooden spoon to mix everything.
    Cook on medium flame until the curry mixture comes to a boil.
    Stir continuously in a circular motion with a wooden spoon.
    Lower the flame and cook uncovered for 30 minutes.
    When the liquid thickens and becomes a smooth gravy,the kadhi is cooked.

  • Making the pakora:
    Heat oil for pakora.with a hand drop the pakora batter in the oil.
    Let it cook and turn over and fry the otherside fry untill the pakora are crispy and golden.
    Remove the fried pakora and place them on a paper towel so that extre oil is absorbed.
    Transfer the fried pakora to the kadhi,and cook on low flame for 10 minutes.
  • Making the Tadka:
    In frying pan,add oil,garlic cloves and fry a few minutes.
    Add whole red chili,cumin seeds,curry leaves,mustard seeds,nigella seeds fry a few minutes.
    Now transfer the tadka to the kadhi pakora.

Notes

  • Tip For Making Best Pakora Kadhi
  • Use Good quanlity Gram Flour.
  • The onion pakora can be prepared before and kept aside.
